Strawberry Lime Jam

* 2 cups crushed strawberry (approximately 1 Quart whole berries).
* 4 cups sugar
* 3/4 cups water
* 1 (57g) package powdered pectin.
* Grated rind and juice of two limes.

Mix berries, lime juice, rind and sugar in a bowl. Let stand 10 mins.
Combine water and pectin in a small saucepan. Bring to a boil 1 min.
stirring constantly. Stir pectin into fruit and continue stirring for 3 mins.
Ladle into freezer containers and seal. Let stand at room temperature
until set (may take up to 24 hours). Store in freezer or will keep
up to 3 weeks in refigerator. Yield: Approximately 3 pints.
